I love these banana-oatmeal fitness cookies as they’re easy to make and great to have as a healthy breakfast or snack. They’re tasty! Probably the most surprising thing about the cookies is that they call for only 2 main ingredients! Just oats and bananas. And anybody can mix two ingredients. Though if you want to make them even tastier and/or healthier you can add raisins, dried fruits, walnuts, sesame seeds, sunflower seeds or cinnamon. That’s up to you!
They’re vegan. No eggs, no milk, none of the usual cookie suspects. There’s also no oil in my recipe but if you like, you can add in 1 tbsp of coconut oil.
You can have them ready in 25-30 minutes including the baking time!
They’re perfect for hiking trips or other occasions where you need a quick energizing snack on the go.

Makes: 12 Cookies
2 ripe bananas
1 cup of oats (oatmeal or porridge oats work really well)
10 pitted dates, chopped
Small handful of dried cranberries or other dried fruits
Small handful of sunflower seeds
Small handful of sesame seeds
You can add pretty much whatever you like!
Preheat the oven to 350°F/180°C.
Get a bowl and and mash the bananas until they’re mushy.
Add the cup of oats and any of the optional ingredients.
Stir until everything is nicely mixed.
Put baking paper on the tray so the cookies don’t stick. If you don’t have that make sure to grease the baking tray with butter (or olive oil if you’re vegan).
To make the cookie shape just grab a spoon and scoop a decent amount from the mixture onto the baking tray. It’s super quick and easy.
Bake in a preheated oven to 350 F/180 C for 15-25 minutes.
