Healthy Vegan Gluten-Free Teriyaki Noodles & Vegetables Stir Fry ♡ Vegan Recipes

Hi guys! This is an easy teriyaki stir fry with noodles, vegetables and tofu (which you can leave out). It’s gluten-free, vegan and so yummy! It’s also perfect as a healthy lunch idea that you can take on to work or on the go and you can also substitute your favourite vegetables!

Ingredients
Vegetable oil (or sesame oil)
1 capsicum chopped
2 cups broccoli florets
1 cup small mushrooms stems removed and quartered
1 medium carrot cut into matchsticks
1 handful gluten-free spaghetti (or other noodles)
200g smoke tofu (optional)
2 tbsp gluten-free tamari (or soy sauce)
4 tbsp agave (or maple syrup)
Freshly cracked black pepper
Garnish: sesame seeds and spring onions (optional garnish but recommended)
